This is the only chili our son will eat and he named it. It is not spicy, so I wanted to call it B.Y.O.H. Chili. (Bring your own Hotsauce.) As you can see by the title, the boy won.
1 medium yellow onion, chopped
2 Tbsp olive oil
2 pounds ground meat (I like a combo of turkey and chicken)
3 cloves garlic, minced
4 medium carrots, chopped
2 medium zucchini, chopped
1 (28 oz.) can crushed tomatoes
1 Tbsp oregano
1.5 Tbsp cumin
2 tsp Ancho Chili powder
2 tsp salt
fresh ground black pepper to taste
In a large pot or Dutch oven, add oil and onions on medium heat. Cook about 10 minutes until translucent.
Add ground meat and brown throughout. Chop and separate as you go as to make a fine consistency.
Then, add the remaining ingredients, cover and cook on low, stirring occasionally for about 45 minutes.
This is better the next day, after the flavors have time to get married in the fridge overnight. You can certainly eat it hot right out of the pot. Serve with different hot sauces and some homemade corn bread.
